The real difficulty lies in doing so “with consistency, making sure every detail reflects that balance between comfort and excellence.” Only a few weeks have passed since his move from Himkok to Advocatuur, and it is time to take stock, discussing luxury and concept without revealing too much about the upcoming drink list.

Maroš Dzurus, the New Face of Advocatuur

The key facts are clear: as of April 2026, Maroš Dzurus is the Director of Bars and Beverage at Advocatuur, within Rosewood Amsterdam. Dzurus was a cornerstone of Himkok, one of the brightest stars among independent cocktail bars in Oslo, and has now transitioned to a prestigious hotel bar. It is a significant leap.

“I did it mainly to grow professionally,” says Maroš. “I appreciated the autonomy and creativity that came with working in an independent bar, but I had reached a point where I was looking for a broader challenge. A luxury hotel like Rosewood Amsterdam allows you to think on a larger scale, in a context where drinks, service and the overall experience are all interconnected.”

In short, choosing Advocatuur “felt like the right step to continue growing and to work within a more complete hospitality environment.”

The Easiest Challenge and the Most Difficult One for Maroš Dzurus

As for the concept Maroš Dzurus aims to develop: “The idea is to create a place where guests feel immediately welcomed, relaxed and at ease, almost like at home, but with a refined level of service and quality. At Advocatuur, we are building this vision together, as a team.”

Within that team, one figure stands out. Jamie Bokhorst, “the Bar Manager, who has a deep understanding of Dutch hospitality and local culture, and takes a constructive approach to both the team and the bar. The easiest part was aligning on the vision. The most challenging part is maintaining that consistency, ensuring that every detail reflects that balance between comfort and excellence.”

Advocatuur’s New Drink List

There is little point in expecting a preview of Advocatuur’s upcoming drink list: “It is still in development, but the direction is clear. Together with Carmine Marano, Head Bartender, we are working on a menu focused on balance, clarity and a strong connection to local ingredients and Dutch tradition. The goal is to create cocktails that feel natural and approachable, while still offering depth and a strong sense of place.”

Luxury Is Precision and Care for Maroš Dzurus

Rosewood Amsterdam is a luxury hotel, with all that entails. But defining luxury is not straightforward, as it varies from person to person. “For me, luxury is attention to detail and how the guest feels. It is not about excess, but about precision, care and making everything feel natural and effortless,” explains Maroš Dzurus. “Behind the bar, this means understanding the guest, being consistent and creating an experience that feels personal and intuitive. When everything flows seamlessly and guests truly feel taken care of, that is real luxury.”
