In practical terms, Artisia means planning before the bar opens and maximum control over portions and waste during the evening. “The recipes come from the drink list and, at the bartender’s choice, can be developed together with chef Beatrice Guzzi to build a bespoke pairing. Pre-cooking the pasta makes it possible to organize the work in advance and go into service with a clearer head. From experience, when quantities are predictable, waste goes down and the bar remains manageable even when demand rises.”

There is also the matter of continuity. “Once boiled, the pasta can be kept in the refrigerator for another day until it is filled, without losing texture and quality. This allows more effective planning than other accompaniments, like a small focaccia or a mini pizza.” From the guest side, the shift is immediate — visually (and on the palate). “You eat and drink with the sense that everything has been executed. A bit like when you go to a restaurant.” And pasta has a broadly democratic appeal.
