Opening a cocktail bar means creating a drink list that clearly defines its identity. At Bar Bridge in Sydney, the focus is firmly on the Extra Dry Martini — the driest expression, where vermouth is used sparingly, if at all. It’s a statement of intent: a refined, almost austere bar designed for guests who resist trends and believe that true enjoyment lies in timeless classics.

Building a menu around the Extra Dry Martini requires consistency. At Bar Bridge, that translates into three distinct variations that stay true to the original while introducing subtle innovation.
The Bridge Martini is a twist on the Vesper, made with local London dry gin and vodka, and an Australian brut sparkling wine concentrated through freeze-drying, garnished with olive and lemon peel. Then comes the Citron Martini, featuring Japanese gin and vodka, and a Kimchi Martini built on Australian gin. There is also a rotating Martini: April’s edition is a Passionfruit Crème Martini.
Beyond the Martini

Once the concept is firmly established, there is room to expand. Bar Bridge includes a precise selection of classics — from the Negroni to the Manhattan, the South Side to the Whisky Sour, alongside the Margarita and Daiquiri.
The signature cocktails — five in total — draw on ingredients from around the world. The Concorde blends calvados with raspberry eau-de-vie; the Highlight combines vodka, dessert wine and melon; the Pippin mixes tequila, cucumber and green apple; the Stirling pairs Scotch with sweet sake; and the Brumble twists the Bramble with gin, blackberry granita, lemon soda and beetroot.

The space reflects the same clarity of concept. Soft lighting, candles and leather seating create an atmosphere aligned with the idea of “living elegantly and drinking with refinement,” punctuated by flashes of red — “almost like in a Baz Luhrmann film,” as Daisy Tulley, ceo of Mucho Group, describes it.
